Kenyan AA Coffee – The King of African Coffees

Although it is just south of the birthplace – Ethiopia – of coffee, coffee cultivation did not begin in Kenya until the late 19th century apparently under the direction of missionaries. The British, though, significantly ramped up production around the turn of the century. Today, Kenyan coffee production is known for its network of small farms and mills.   More than 6 million Kenyans are said to be employed in the coffee industry. A cooperative system has evolved over the years with at its core an open auction system.   This auction system may be what has allowed Kenyan coffee to maintain its highly regarded quality. 

There is some confusion among drinkers about the much sought after “AA” designation of Kenyan coffee.   The “AA” is not a type of coffee per se, but rather the label refers to the size of the bean itself.   The Coffee Board of Kenya has established a grading system based on the size and form of the bean.   Coffees assigned the grade “AA” are generally the largest bean. The grading scale, from largest to smallest, is AA, AB, PB, C, E, TT and T. One reason quality is often remarked to coincide with the size of the bean is the higher oil content of larger beans.  Kenyan AA beans also are cultivated from the premium Arabica coffee plants, rather than the less flavorful Robusta coffee plants.

After the beans are milled, the coffee is graded according to size.   Samples from each lot are then provided to licensed exporters, who then bid on each lot according to their own evaluations. Weekly auctions are held in downtown Nairobi.  The open, transparent system wherein the highest bidder obtains the lot reinforces a positive price-quality relationship – that is, the best quality yields a higher price. 

Of course, the quality of Kenyan coffee is not based solely on its exporting infrastructure. The quality must originate in the cultivation process. For certain, Kenya has rich, acidic volcanic soil where the coffee is grown at altitudes ranging between 5,000 and 7000 feet above sea level. Production is concentrated on the high plateaus that surround 17,000-foot Mount Kenya.   Here the climate is moderate throughout the year along with a relatively consistent rainfall patterns. Kenya has invested in researching the best cultivation techniques and even the smallest farmer is likely to be knowledgeable about coffee production. 

Premium Kenyan coffee beans – in particular, AA beans – are universally wet processed. The cherry surrounding the bean is removed and then the beans are submerged in a water tank. In the water tank, a natural fermentation process breaks down the cherry residue left on the bean. The final parchment layer is then removed after the beans have been dried by hulling.

So what should you expect from a cup of Kenyan coffee?  While it generally is classified as medium bodied coffee, Kenyan coffee packs an intense flavor and enticing aroma. Multi-faceted in taste a premium Kenyan coffee enthralls with fruit dimensions ranging from citrus to berry along with noted wine-toned acidity. It is a rare Kenyan cup that will leave the drinker with an unpleasant aftertaste.

Fair trade coffee sometimes is misunderstood, but it is quite simple. Fair trade coffee is coffee that is produced differently. They still use the finest quality of coffees, but there is something special and unique about it. Fair trade coffee ensures that the people who are working in the coffee industry are treated fairly. The United States consumes an extremely large amount of coffee. It is important to think about the people around the world who are harvesting and producing the coffee. The coffee drinkers of the United States often only think about the price and place of their coffee and do not think about the production, harvest, and shipment of this fine product.

Many of the people who work within the coffee plantations are treated very poorly. The coffee that is labeled as Fair Trade has standards for the workers. There are very specific rights of the workers. The criteria and requirements of the workers are held to this standard and that the workers receive appropriate compensation. This organization has the objective of helping the coffee drinkers in the world to purchase and brew coffee where the working conditions are sufficient for the employees. The focus on the organization is to ensure that socially and economically, the coffee field employees are not being exploited.

Many coffee fields have long work days involving unfair conditions and for very little pay. Companies who treat their workers in this fashion should not be compensated by people buying their product. Fair Trade has a definite certification process and through the labeling of the products lets the rest of the world know that this coffee was harvested under the best conditions for the workers. It is the same as not purchasing clothing that was produced under sweatshop conditions.

Some of these coffee fields should be considered “sweat shops in the field.” There are farmers who own small coffee plantations that are not treated fairly either. The companies tend to offer them little compensation for their coffee. This leaves the farmer being exploited. The farmers often end up in poverty. This is unfair to the farmers who have the desired product.

The people who love coffee should think twice before buying coffee that is not Fair Trade certified. Many people who find that they are looking into Fair Trade coffee have found that there are many suppliers with very reasonable prices. There are several Fair Trade coffee websites and one brand that is common is Dean’s Bean which is a morning brew. The cost difference between ordering online and buying from the grocery store is minimal. It is a great feeling for the people who do purchase off of the websites that each is doing their part to support the Fair Trade coffee industry. It makes every cup of espresso or cappuccino more enjoyable knowing that you are doing something special for the workers in the world.

As the coffee industry shifts toward fair trade practices and organic certification, more farmers are switching to organic and sustainable practices. But, what does that mean, and how does it affect the actual coffee? For answers to these questions and tips on where you can find gourmet organic coffee, keep reading.

What Does Organic Mean?

Organic coffee typically indicates it has been certified by the USDA and meets their stringent growing and harvesting standards for organic certification. Therefore, coffee that has been certified as organic has been farmed using methods that have a minimal impact on the environment and little to no reliance on chemical or unnatural methods.

Because coffee is harvested as a seed, buying organic has little-to-no health effects for the consumer. However, purchasing an organic coffee bean means you’re supporting environmentally friendly and sustainable farming methods.

Ethical or Fair Trade Purchasing

Making a superb gourmet coffee all starts with beans. Gourmet coffee beans are mostly Arabica because of their supreme robust flavor and smooth texture. Arabica beans are considered the premium bean in the coffee industry and the demand is high which makes it much pricier than other beans. Arabica coffee beans are the most prominently grown and provide approximately 60% of world coffee production. One reason the beans are so expensive is that the Arabica plant is very sensitive to unfavorable conditions such as frost, pests and disease. What leads people to wait in long, long lines for a cup of gourmet-brewed coffee beverage? Just what are espresso, cappuccino and macchiato?

Espresso: Surprisingly enough, espresso coffee is already one of the most popular coffee drinks in the world. It is also the basis for specialty drinks like Cappuccino. Espresso coffee is regular coffee, brewed and consumed at very concentrated brewing and drinking ratios. It is brewed much faster than regular drip coffee. Since the hot water is quickly forced through the fine grounds it usually only takes between 25 and 30 seconds to brew a cup of espresso.

Cappuccino is a delicious, luxurious coffee beverage that is enjoyed by coffee lovers the world over, combining creamy, frothy texture with distinctive espresso flavor and aroma. Cappuccino is named for the resemblance of its color to the robes of the monks of the Capuchin order. Cappuccino is a cup of espresso coffee with fresh milk and milk foam bubbles burst on the top of cup. The milk foam bubbles burst acts as the insulator and keep the heat of the coffee for a longer time.

A latte is basically a diluted cappuccino with almost entirely steamed milk and a dollop of foam on top. Cafe latte is simply the Italian words for “coffee and milk”. The drink was made using a “moka” (a stovetop coffee machine which makes double-strength coffee, not espresso).

A Mochaccino is simply equal parts cappuccino and chocolate syrup. Some of the finer coffee houses prefer the term Cafe Mocha, using a powdered cocoa mixed with diluted cappuccino and topped with a whipped cream dollop. This is a very popular alternative to a traditional hot chocolate drink, neither as thick nor as sweet.

A Cafe Americano, similar to a long black common in Australia, is a style of coffee made by pulling a double-shot of espresso over hot water . A long black is similar to an which is made by adding hot water to espresso shots, but it retains the texture and is less voluminous, therefore more strongly flavored.

In addition to the hot drinks, there are a wide variety of delicious gourmet iced coffee drinks as well. If you’re looking for one of those milkshake looking drinks, you might want to try a mocha frappuccino, which is basically a cold mochaccino with more calories.

Knowing how to prepare gourmet coffee drinks is a fine art. A barista is someone who makes espresso drinks for a living, and is usually highly trained and has a thorough understanding of how to work with coffee. Similar to a bartender, a barista specializes in making drinks from almost any incarnation of the coffee bean.

Dark roasted coffee is more popular than ever, and the odds are that you may have enjoyed a dark roasted cup of Joe a time or two in your lifetime. However, as a coffee lover, it is important to understand the difference between dark and light roasted coffee because they are two diverse coffee styles.

Interestingly enough, mass marketing and commercial appeal has presented dark roasted coffee as the best quality and choice. Dark roasted coffee is popular on the market, especially when you consider that the coffee industry is the second-largest exporter next to oil worldwide. This gives the coffee industry the opportunity to market dark roasted beans as the number one choice available. A dark roast is actually made of coffee beans roasted for a longer period of time at a higher temperature, which causes many flavor molecules within the beans to burn away. This is both good and bad because bad flavors can be burned away in the roasting process, but that can include good flavors as well. When a coffee is roasted very dark, it is difficult for the drinker to tell if it is made from good or bad quality beans because it has a smoky and charcoal flavor overall.

Many coffee companies are attempting to dark roast all of their coffee to mask the type of beans that they are using, which is why dark roast Java is presented as the more popular variety on the market. This does not always mean a dark roasted coffee is a bad choice because there are many wonderful beans used to create dark roasts of Java. However, it still pays off to be a savvy customer and choose a roast made of flavorful and quality beans, whether it is light or dark.

A light roasted coffee is roasted for a shorter period of time, and it will have more flavor characteristics from the region that it is grown in. Some of these flavors may include those influenced by weather and soil, and some examples of light roasted coffee beans are Java and Kona. Light roasts are for coffee drinkers who want more specific flavors and characteristics within their brew, native to the region that the beans were grown in. Oftentimes, the coffee drinkers that choose a darker roast are not focusing necessarily on where the beans came from but the flavors that the roasting process provided as a result.

The lightest roasted Java available is called the City Roast, and the beans will normally look light or medium brown. These beans are roasted after the first crack in the roasting process, and the second lightest roast, Full City Roast, will be roasted until the second crack.

If you are a dark roasted Java drinker, it may be worth your while to try a lighter roast if you want to experience flavors and tastes from each specific coffee growing region. This is an excellent way to sample premium varieties in your cup of Joe!
