A Good Cup of Coffee

Though I have never been a coffee drinker, I love the smell of it brewing in the morning. I guess it is because I have happy memories as a child and I knew the smell of coffee meant my mother was up and we were going to have one of her wonderful breakfasts or that we were at my grandmother’s house and we were going to have one of her wonderful breakfasts. My grandmother always had a pot of coffee on the stove for visitors – and a homemade apple pie – and there was always someone at the house visiting!

People have been enjoying the benefits of coffee for over fifteen hundred years. Originating from the Kaffa, Buno, and Ethiopia areas, the main center of production was the port city of Mocha, Yemen, where it was served to Italian merchants and then spread to Europe in the 1600′s. Little did the Turks know that they were serving what would become one of the most popular drinks in history. Coffee houses began ‘brewing’ all over North American in 1668 in towns such as Boston, New York and Philadelphia. According to the U.S. Department of Agriculture, Americans drink on the average of more than eight ounces of coffee a day.

The benefits of coffee are astounding. Coffee is extremely high in antioxidants (substances that slow down or prevent oxidative damage to our cells and bodies and act as free radical scavengers). In Harvard Health Publication, studies have shown coffee in moderation can reduce the risk of developing gall stones, colon cancer, liver damage, Parkinson’s disease, improve endurance performance in physical activities and cognitive function.

It is recommended that coffee be consumed in moderation since it is a stimulant. Too much coffee or anything for that matter, can do more harm than good, so limit consumption to no more than two cups a day. Over consumption of coffee can cause anxiety or panic attacks and in some cases increase the risk of heart disease in some people. If you find that you are jittery or nervous after drinking coffee, cut back.

The key to brewing a good cup of coffee is to grind good quality fresh beans yourself. As soon as the beans are ground, precious oils that make your coffee taste great are lost. Just imagine how great your coffee will taste from freshly ground beans. A coffee grinder is used for this purpose and a must if you really want a good cup of coffee. I am going to add a personal note here about coffee grinders. I have one and use mine to grind nuts and seeds to make a coating for food instead of breadcrumbs. I grind almonds, sunflower and pumpkin seeds, mix them together with paprika, herbs, a little salt and pepper. This makes a grand coating for salmon cakes or chicken and fish. Then I pan sear, and serve with a mayonnaise, lemon, garlic, and horseradish sauce. Yum. 

I have also used mine to grind herbs if I want them really fine. If you wish to use a coffee grinder for other things, it is best to purchase two – one for coffee and one for grinding nuts, seeds and herbs. Purchase high quality beans, of course choosing the type of bean for a particular flavor is up to you. If your water is poor quality, use filtered or spring water to make your coffee taste even better.   Also consider organic coffee and experiment with different flavor beans to find your favorite. Our parents used to let us have a small amount of coffee when we were kids. They called it coffee milk and it consisted of coffee, pure cream – more cream than coffee and sugar. That was a real treat.

The origin of the word “coffee” entered English in 1598 via Italian caffè. This word was created via Turkish kahve, which in turn came into being via Arabic qahwa, a truncation of qahhwat al-bun or wine of the bean. Traditional Islam prohibits the use of alcohol as a beverage, and coffee provided a suitable alternative to wine.

There are several legendary accounts of the origin of the drink itself. One account involves the Yemenite Sufi mystic Shaikh ash-Shadhili. When traveling in Ethiopia, the legend goes, he observed goats of unusual vitality, and, upon trying the berries that the goats had been eating, experienced the same vitality. A similar myth attributes the discovery of coffee to an Ethiopian goatherder named Kaldi and the Legend of Dancing Goats.

One possible origin of both coffee the beverage and the name is the Kingdom of Kaffa in Ethiopia, where the coffee plant originated (its name there is bunn or bunna).

Coffee has become the second most valuable commodity in the world after oil. Coffee originated in the highlands of Ethiopia during the 15th century, and 125 million people today depend on coffee for their livelihood. The World Bank estimates that nearly 500 million people are involved in the coffee business, if you include the people who make the cardboard coffee cups. Coffee has become big business, and with the recent explosion in coffeehouses around the world, it shows no sign of slowing down.

Coffee is a widely consumed beverage prepared from the roasted seeds – commonly referred to as beans – of the coffee plant. Though sometimes served cold, it is typically served hot. A typical 7 fluid ounce (ca. 207 mL) cup of coffee contains 80-140 milligrams of caffeine, depending on the bean and method of roasting and preparation.Some people drink coffee “black” (plain), others sweeten their coffee or add milk, coffee cream or non-dairy coffee creamer. The majority of all caffeine consumed worldwide comes from coffee, as much as 85% in some countries.Coffee, along with tea and water, is one of the most popular beverages world-wide, its volume amounting to about a third of that of tap water in North America and Europe.In 2003, coffee was the world’s sixth largest agricultural export in value, behind wheat, maize, soybeans, palm oil and sugar.

History of Coffee: From Africa to Your Breakfast Table

Coffee is one of the most popular beverages in the world. The word coffee is believed to have been deduced from Kaffa, a place situated in Ethiopia, Africa, It came into existence around 800 A.D. and there are many legends and stories associated with discovery.

One such interesting story goes like this. One day a monk saw a goatherd imitating his sheep who were dancing from one shrub to another, grazing the cherry-red berries containing coffee beans. The monk was amazed at the goatherd’s caper on eating the beans. The monk took some of the berries for his fellow monks and that night they realized that they seemed to attain something that they felt was ‘divine stimulation’.

Other than the legends and stories there is also historical evidence about how the Africans of the same era used the coffee plant in different ways. Africans used what can be called primitive ‘Power Bars’ made of coffee and animal fat as a stimulant. They also made wine from the coffee-berry pulp. From Africa, coffee moved out towards Arabia via the Red Sea and then slowly made its way to the rest of the world.

Coffee, as we know it today came into existence around 1000 A.D. and this is when it was first roasted and brewed. By the 13th Century, coffee became popular with the Muslim holy men who found it a very convenient drink it to keep worshippers awake and send them in a tizzy. Then onwards, coffee traveled with the Muslims. Wherever Islam went, coffee traveled along. However, Arabians were cautious and did not want to share the plant with the world. They made sure that no coffee bean sprouted outside Arabia and coffee beans were boiled or parched to make them infertile before taking out of Arabia.

An enterprising Indian pilgrim cum smuggler, Baba Budan, strapped some fertile coffee beans to his stomach and left Mecca. These beans were ultimately responsible for the agricultural expansion of coffee, which later reached Europe’s colonies in the East.

From these colonies, coffee was traded by a Venice merchant who took it to Europe. The Europeans liked it so much that they wanted a constant supply of the beans. And later, it was the Dutch who set up the first European-owned coffee plantation in colonial Java in 1616. The Dutch were, however, not as cautious as the Arabians and they gifted coffee trees to the aristocracy all over Europe. Louis XIV was presented one such coffee tree in 1714, for his garden in Paris.

The coffee tree finally crossed the Atlantic with Gabriel Mathieu de Clieu, a retired French naval officer. He smuggled a sprout with him to Martinique, a French Colony in the Caribbean after he was denied a clipping of the tree. Gabriel Mathieu de Clieu guarded the plant religiously. When the ship got caught in a storm de Clieu nurtured the pant with half of the water that he was rationed. Ultimately, the sprout flourished in Martinique and in the next 50 years more than 18 million coffee trees were grown there.

By 1727, Brazil had realized the potential of the plant and wanted a share in the coffee pie. Unable to get the plant through fair means, they dispatched Lt. Col. Francisco de Melo Palheta, allegedly to mediate in a border dispute, to French Guiana. Avoiding the heavily guarded coffee plantations, he chose to take the easy route of befriending the governor’s wife who slyly presented him a bouquet spiked with coffee seedlings on his farewell dinner. Coffee had now entered Brazil, a land of extremely fertile farms.

From 800 A.D. in Africa to 1727 in Brazil, the coffee plant had traveled through Middle East, South East and Europe and then to South America. Production of coffee reached dizzying heights due to the enormous harvests of Brazil’s fertile lands. This boom in production, apart from anything else, was instrumental in turning coffee, an elitist drink till then, into a drink of the masses.

Initially considered as a poor substitute for alcohol by the American colonists, its popularity grew when tea from Britain became scarce during the Revolutionary War. During and after the American Civil War, coffee had gained a premier position and was being increasingly accepted. Later, advancement in brewing technology ultimately secured its place as an everyday beverage of America.

History of Coffee: Part I – Africa and Arabia

The coffee plant originates from the highland forests of Ethiopia. It is believed that the first plants were found growing wild in the region of Kaffa, where coffee derives its name from. A popular legend tells of a goat herder named Kaldi. One day he noticed his goats behaving in a strange manner. They were full of energy, playfully chasing each other and bleating loudly. He noticed they were eating red berries from the bushes nearby. Feeling tired and slightly curious, Kaldi decided to try some of the berries. To his delight his fatigue quickly faded into a fresh burst of energy.

Kaldi was so impressed by the berries, that he filled his pockets with them and ran home to show his wife. “They are heaven-sent” she declared, “You must take them to the Monks in the monastery”. At the monastery, Kaldi told the Abbot how these berries had had a miraculous energising affect on himself and his goats. The Abbot clearly displeased, hurled the berries into the fire, proclaiming them as the “Devil’s work”.

Within minutes the berries started to smoke and the monastery was filled with the heavenly aroma of roasting beans. The other Monks quickly gathered to see what the commotion was. One Monk swiftly raked the beans from the fire and extinguished the embers by stamping on them. The rich smell of coffee obviously agreed with the Abbot’s nose as he ordered the Monk to place the now crushed beans into a jug and cover it with hot water to preserve their divine goodness. He then took a sip from the jug and sampled the rich and fragrant brew that is coffee. From that day on the Monks vowed to drink coffee daily to keep them awake during the long, nocturnal devotions.

No one is exactly sure when coffee was discovered. There is evidence to suggest that coffee beans were used to make a primitive ‘energy bar’ before they were actually brewed as a hot drink. Sometime between 575-850AD, a nomadic mountain tribe known as Galla, used to mix ground coffee with ghee. These bars were consumed by the tribe’s warriors to heighten aggression and increase their stamina during battle. To this day, these bars are still eaten in Kaffa and Sidamo (Ethiopia).

Some authorities claim that coffee originated from the Arabian Peninsula rather then Ethiopia, stating that coffee was cultivated in Yemen from around 575AD. An Islamic legend tells of how Sheikh Omar discovered coffee growing wild while living as a recluse near the port of Mocha (Yemen). He is said to have boiled some berries, and discovered the stimulating effect of the infusion, which he administered to the locals who were stricken with a mysterious illness and thus cured them. However it is more likely that coffee spread to Yemen through Sudanese slaves. These slaves are thought to have eaten coffee beans to help them stay alive as they rowed ships across the Red Sea between Africa and Arabian Peninsula.

Evidence suggests that coffee was probably not enjoyed as a beverage until around the 10th Century. It is at this time that the oldest known documents describing the beverage coffee were written. Two Arabian philosophers: Rhazes (850-922AD), and Avicenna of Bukham (980-1037AD); both refer to a drink called ‘bunchum’, which many believe is coffee.

As the Quran forbids Muslins from drinking alcohol, the soothing, cheering and stimulating effects of coffee made it a popular substitute in Islamic countries for wine. The first coffeehouses are said to have been established in Mecca (Saudi Arabia). Known as the Kaveh Kanes, they were public places where Muslims could socialise and discuss religious matters.

The relationship between Islam and coffee has not always run smoothly though. Some Muslims believed coffee was an intoxicant and therefore is banned by Islamic law. In 1511, the governor of Mecca, Khair Beg, saw some worshippers drinking coffee in a mosque as they prepared for a night-long prayer vigil. Angered, he drove them from the mosque and ordered all coffeehouses in Mecca to be closed. This incited the pro-coffee Muslims and a heated debate soon ensued. In this dispute, two unscrupulous Persian doctors, the Hakimani brothers, who were infamous for testifying on the side of the highest bidder, condemned coffee as an unhealthy brew. The doctors had good reason for wanted it banned, for it was popular cure among the depressed patients who would otherwise have paid the doctors to cure them. The matter was only resolved when the Sultan of Cairo, Khair Beg’s superior, intervened, demanding that a drink that was widely enjoyed in Cairo should not have been banned without his permission. Khair Beg soon paid for his insolence, as when in 1512 he was accused of embezzlement; the Sultan sentenced him to death.

By the late 16th Century, the use of coffee was widespread throughout the Arabia, North Africa and Turkey. The nutritional benefits of coffee were thought to be so great that coffee was considered as important as bread and water. So much so that a law was passed in Turkey making it grounds for divorce if a husband refused his wife coffee.

Wherever Islam went, coffee was sure to follow. With the expansion of the Ottoman Empire, coffee quickly spread to the Eastern Mediterranean. However, it is believed that no coffee seed sprouted outside Africa or Arabia until 17th Century, as coffee beans exported from the Arabian ports of Mocha and Jidda, were rendered infertile by parching or boiling. Legend has it that this changed when a pilgrim named Baba Budan, smuggled fertile coffee beans out of Mecca, strapped to his stomach. Returning to his native India he successfully cultivated the beans in Mysore.
